Usually this happens when the config file for the application is
corrupt. Mac applications store their config information in plist files
under various Library directories.
Look for a Adobe Illustrator CS plist files under:
<your home dir>/Library/
<your home dir>/Library/Application Support
<your hard disk>/Library
<your hard disk>/Library/Applicaton Support
If you find a plist file for Illustrator (and I am sure you will), just
copy it to the Desktop and DELETE the original file.
Then start Adobe Illustrator and check if it starts up..
